Peanut Butter Pupcakes

Friday 5 April 2013

Our puppy Dexter adores his treats and is always keen to try out new ones, so I thought I'd devote some time to baking him some scrumptious pupcakes as a surprise!

I love my dog, so much, he's become a massive part of our lives that we regard him as a part of the family, a little bundle of life and love that is so spoilt and pampered that can't you resist indulging him.

These pupcakes are full of all the things pup's love, lots and lots of peanut butter! I love to bake, especially for other people to enjoy so I thought it would be lovely to make some homemade treats for Dex where I know exactly whats going into them, no nasty additives or anything! Just tasty wholesome ingredients! They're great to share with other pups and dogs too ;)!

So this is Dexter, isn't he cute! I know I did a post about him yesterday but I thought It would be nice to go into some depth as I guess it's relevant to this post! He's become very popular around parks and on the street, we're constantly being stopped so people can pet him and ask about him which he and I both love, what pup doesn't love to be the center of attention?

Dexter is an English Springer Spaniel who is 4 months, still very much a puppy! However I feel he is one of the smartest dogs that I've ever come across, I'm not just saying that because he's mine, he knows an array of tricks: sit, stay ,lie down, high five, spin! He loves to play fetch, run around mad and have his belly rubbed,  but his favorite thing to do is play rough with his bestest friend Ruko! He's also so cheeky, he ignores his own ball to steal other dog's and never gives them back!

Despite all the puppy craziness he's growing into a really wonderful dog, he loves all humans and dogs alike - he also has a keen interest in the cat! He's learning more tricks as time passes and is developing lots of lovely spots and markings, his hair is also starting to get longer and his tail is starting to fan out!

He's so adorable! He has what I like to call 'bed ears' (haha) as they are so fluffy and curly they just puff out and look so, so cute!

He really loved the pupcakes and demolished it in seconds! They're so easy and fun to make your doggie will love them! A really great homemade treat, now for how to make them!

Peanut Butter Pupcakes
Makes: 15 pupcakes Prep Time: 10 minutes Bake Time: 20 minutes

Ingredients

1/2 cup smooth peanut butter (unsalted it possible!)
1 teaspoon vanilla
1/4 cup vegetable oil
2 eggs
1 teaspoon baking soda

1 1/2 cups wheat flour

For the frosting I just use a small amount of peanut butter with 2 or 3 small treats to decorate.

Directions

Preheat the oven to 350 degrees F.

Line a muffin tray with about 15 cupcake cases, I'd add a few more just in case you have slightly more batter or how much you fill up the cases, I'd recommend half way.

In a bowl medium or large add the peanut butter, eggs, vegetable oil and vanilla and beat together with a whisk until the ingredients come together to form the mixture.

Sift in the flour and baking soda then using a spatula fold it into the mixture making sure it all comes together nicely. Using an ice cream scoop place the batter into each of the muffin cases.

Bake in the oven for 15-20 minutes at 350 F or until a cocktail stick can be inserted into the cake and be pulled out clean.

Remove from the oven and set aside for a around 5 minutes to cool before placing on a wire rack to cool completely.

You can freeze the pupcakes in the freezer as a treat for hot days! - I can guarantee your dog will love these pup cakes!
